Lentil tomato waffles
A great savory waffle with a topping of ground beef, lentils and tomato.
This recipe is for four waffles and four toppings. Which makes for four 2-block snacks/meals. Off course you can make more or less of them if you like.

- 3P3 eggs
- 1P62 grams of low fat naturel quark
- 1C74 grams of cooked lentils
- 0.3C101 grams of tomatoes
- 2.7C41 grams of oatmeal flour
- 1F100 ml of low fat almond milk
- 3F6 grams of olive oil / cooking spray
- 4P168 grams of lean ground beef
- 1C119 grams of onion
- 1C45 grams of sundried tomatoes
- 1C106 grams of tomatosauce
- 1C74 grams of cooked lentils
- 4F8 grams of olive oil

How to cook
- Dice the tomatoes into small pieces.
- Put all the ingredients, except for the olive oil, in a bowl.
- Add some harissa, salt and half a vegetable stock cube.
- Use a (hand) blender to mix it all together.
- Spray some cooking spray on the waffle maker (or use olive oil).
- Make four waffles in your waffle maker. Read your manual to see how long it needs to bake. Mine are done in 3.5 minutes.
- For the topping: dice the onions and cook with a bit of olive oil, salt, pepper and garlic (paste) until they're transparent.
- Add the ground beef and cook until all of it is brown.
- Add the lentils, the tomato sauce and the sundried tomatoes and cook for a little bit.
- Top a waffle with a quarter of the ground beef mixture and add a bit of rocket.

Tips
- Divide your batter into 4 equal smaller bowls and just pour the whole contents of the bowl into the waffle maker.
- My portions of batter are about 120 grams which fit perfectly into my waffle maker.
- You can also just make the waffles and eat them without a topping.
